Follow the noodle package instructions to cook them. Drain completely and put them aside for now.

Heat sesame oil over medium heat in a large skillet. Add the beef and cook until it's no longer pink, breaking it apart as it browns. Drain the extra fat if needed.

Mix in ginger, garlic, and red pepper flakes if you're using them. Keep cooking for another minute or two until you can smell the aroma.

Add the hoisin, soy sauce, and brown sugar. Let it simmer for about 3-4 minutes so the sauce thickens up a bit.

Throw the noodles into the skillet. Stir them around so the sauce and beef cover them really well.

Top with sesame seeds, chopped green onions, and red pepper flakes if you're into spice. Serve it hot and dig in.
