Sticky Beef Noodles (Print Version)

# Ingredients:

01 - 1 lb (450g) flank steak or sirloin, cut into thin strips
02 - 8 oz (225g) lo mein, udon, or rice noodles
03 - 3 tbsp vegetable oil (split use)
04 - 2 tbsp cornstarch
05 - 1 red bell pepper, sliced thin
06 - 2 cups (120g) broccoli, broken into florets
07 - 2 garlic cloves, finely chopped
08 - 3 green onions, chopped (save extra for finishing)
09 - 1 tbsp grated fresh ginger

→ Sticky Sauce Ingredients

10 - 1/4 cup (60ml) soy sauce
11 - 2 tbsp honey or brown sugar
12 - 2 tbsp hoisin sauce
13 - 2 tbsp lime juice or rice vinegar
14 - 1 tbsp sesame oil
15 - 1/4 tsp red pepper flakes (optional, for a kick)

# Instructions:

01 - Follow the instructions on the noodle package to cook them. Drain well and leave them aside for now, ready to jump in later.
02 - Coat the beef slices with cornstarch, making sure each piece gets covered. Heat 2 tablespoons of oil in a hot skillet or wok. Add the beef, laying it flat so it browns nicely. Let it sizzle for about 2-3 minutes per side until caramelized, then take it out and put it aside.
03 - Add the last tablespoon of oil to the same pan (don’t clean it—those beef bits are gold). Stir in the broccoli and red bell pepper, cooking for 4-5 minutes until the veggies are bright, tender, and still slightly crisp.
04 - Toss in the minced garlic, ginger, and green onions. Keep stirring for 1-2 minutes until everything smells incredible, and you know you're onto something delicious.
05 - In a small mixing bowl, combine the soy sauce, hoisin, honey, sesame oil, lime juice, and red pepper flakes (if you want some spice). Give it a good whisk until smooth. This will be your flavor kicker.
06 - Return the beef to the skillet, toss the cooked noodles in, and then pour your lovely sauce all over it. Toss everything together until the noodles and beef are coated beautifully.
07 - Spoon everything onto plates or bowls while it's still nice and hot. Finish by sprinkling extra green onions on top. Watch everyone dig in like they're starving!

01 - Want this gluten-free? Stick to gluten-free noodles and soy sauce.
02 - Change up the vegetables if you'd like! Carrots, baby corn, or snap peas would work wonderfully.
03 - Leftovers store great for 2-3 days in the fridge. Reheat quickly on the stove or in a microwave.
