Hearty Beef Braise (Print)

A French-style beef dish slow-cooked in red wine with veggies, mushrooms, and bacon.

# Ingredients:

→ Meat

01 - 2.5-3 lbs of beef made for stewing
02 - 8 ounces of smoky pork or bacon

→ Vegetables

03 - A pound of cremini mushrooms
04 - 4-5 medium-sized carrots
05 - 10 little pearl onions
06 - Three garlic cloves

→ Liquids & Seasonings

07 - A couple of cups of dry red wine
08 - 2 tablespoons of brandy
09 - 2 cups of savory beef stock
10 - 2 tablespoons of tomato paste
11 - 1/4 cup of all-purpose flour
12 - 6 tablespoons of butter
13 - 3 bay leaves
14 - Four sprigs of fresh thyme

# Steps:

01 - Sprinkle the beef with salt and let it sit for 2 hours. Then, heat the oven to 325°F.
02 - Fry up your bacon until it’s nice and crispy. Take it out but keep the fat in the pot.
03 - Throw the beef chunks in batches into the hot pot, letting them sear until they’re golden brown before you take them out.
04 - Using butter, cook up the veggies and herbs. Let the onions soften till they look shiny and delicious.
05 - Put the meat back in, toss in the liquids and tomato paste, cover it, and let it gently cook for an hour and a half.
06 - Separately sauté the mushrooms and mix them into the stew. Cook everything together for another 30 minutes.

01 - Tastes even better if eaten the next day!
02 - Brown the beef a little at a time for the best flavor.
03 - Pick a good-quality wine for cooking.
