In a medium pan, warm up some olive oil on medium heat. Toss in the onion slices and let them cook for about 3-4 minutes. Stir now and then, and let them soften and turn a bit golden.

Season the chicken with a bit of salt and pepper, then lay them in the pan alongside the onions. Cover it up and cook for a couple of minutes on medium-low. Remove the lid, give the thighs a flip here and there, and let them go until they’re cooked through (should take around 10 minutes total, reaching 165°F).

When the chicken is done, grab two forks and shred it up right in the pan. Pour in the BBQ sauce and stir it around so every bit of chicken gets coated nicely.

Sprinkle the shredded cheese evenly on top of the chicken mixture. Cover the pan again for a minute or two so the cheese melts. Make sure to serve it when it’s nice and hot!
