Effortless BBQ Chicken (Print Version)

# Ingredients:

→ Main Ingredients

01 - Salt and pepper, as much as you like
02 - ½ cup of shredded cheese
03 - ⅓ cup of BBQ sauce with less sugar
04 - 5 chicken thighs, no skin or bones
05 - 1 medium onion, sliced thinly
06 - 1 teaspoon of olive oil

# Instructions:

01 - In a medium pan, warm up some olive oil on medium heat. Toss in the onion slices and let them cook for about 3-4 minutes. Stir now and then, and let them soften and turn a bit golden.
02 - Season the chicken with a bit of salt and pepper, then lay them in the pan alongside the onions. Cover it up and cook for a couple of minutes on medium-low. Remove the lid, give the thighs a flip here and there, and let them go until they’re cooked through (should take around 10 minutes total, reaching 165°F).
03 - When the chicken is done, grab two forks and shred it up right in the pan. Pour in the BBQ sauce and stir it around so every bit of chicken gets coated nicely.
04 - Sprinkle the shredded cheese evenly on top of the chicken mixture. Cover the pan again for a minute or two so the cheese melts. Make sure to serve it when it’s nice and hot!

# Notes:

01 - To boost the flavor, let the onions get a good golden color, and try to brown the chicken a bit before shredding.
02 - Adding some sliced mushrooms when cooking the onions gives a tasty twist with extra nutrients.
03 - Pick a BBQ sauce with low sugar to keep things friendly for low-carb and diabetic diets.
