# Ingredients:

01 - 2 teaspoons of olive oil
02 - 1 pound of chicken thighs, skinless and boneless, cut into small chunks
03 - 2 teaspoons of finely chopped garlic
04 - ⅓ cup of sweet barbecue sauce
05 - Salt for taste
06 - 10 hard taco shells, stand-up style
07 - 2 cups of mozzarella cheese, shredded

08 - 1 pinch of Italian seasoning or pizza flavor mix
09 - 2 tablespoons of black olives, sliced
10 - ⅓ green bell pepper, thinly sliced without seeds
11 - ¼ cup of mushrooms, cut into thin slices
12 - ¼ red onion, thinly cut

14 - Fresh salsa
15 - Creamy sour cream

# Instructions:

01 - Turn your oven to 400°F (200°C). Spray a 9x13 dish lightly with cooking oil and put it aside for later.
02 - In a pan over medium-high heat, warm olive oil. Toss in the chicken chunks to sear them until they turn golden and crispy outside.
03 - Stir in the garlic and cook until its scent pops, around 1 minute. Add BBQ sauce and sprinkle in salt (roughly ½ teaspoon). Let it cook until the sauce is shiny, thickened, and coats the chicken nicely. Turn off the heat.
04 - Line the taco shells in the greased dish you prepared. Layer about 1-2 tablespoons of shredded cheese at the base of each shell to help keep them from getting too soft.
05 - Add 2-3 tablespoons of barbecue chicken into every taco shell on top of the cheese. Keep stuffing until all the chicken is used up.
06 - Spread out the bell pepper, onion, mushrooms, and olives across the tacos, making sure it’s even. Add another layer of cheese on top and finish with a dash of Italian seasoning or your favorite pizza blend.
07 - Slide the dish into the hot oven and bake for about 15 minutes, or until that cheese is gooey and nicely browned.
08 - Take it out and serve it right away while it’s warm. Add any extras you like, such as guac, salsa, or sour cream.

# Notes:

01 - Chicken breast can work instead of thighs, but you’ll need to watch the cooking time so it doesn’t dry out too much.
02 - Use toppings that you love—try throwing in pineapple, pepperoni, or hot peppers to change things up.
03 - Want more heat? Toss in jalapeños or a pinch of chili flakes while assembling.
