Turn your oven to 400°F (200°C). Spray a 9x13 dish lightly with cooking oil and put it aside for later.

In a pan over medium-high heat, warm olive oil. Toss in the chicken chunks to sear them until they turn golden and crispy outside.

Stir in the garlic and cook until its scent pops, around 1 minute. Add BBQ sauce and sprinkle in salt (roughly ½ teaspoon). Let it cook until the sauce is shiny, thickened, and coats the chicken nicely. Turn off the heat.

Line the taco shells in the greased dish you prepared. Layer about 1-2 tablespoons of shredded cheese at the base of each shell to help keep them from getting too soft.

Add 2-3 tablespoons of barbecue chicken into every taco shell on top of the cheese. Keep stuffing until all the chicken is used up.

Spread out the bell pepper, onion, mushrooms, and olives across the tacos, making sure it’s even. Add another layer of cheese on top and finish with a dash of Italian seasoning or your favorite pizza blend.

Slide the dish into the hot oven and bake for about 15 minutes, or until that cheese is gooey and nicely browned.

Take it out and serve it right away while it’s warm. Add any extras you like, such as guac, salsa, or sour cream.
