Healthy Banana Oatmeal Cookies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 2 large ripe bananas, mashed (about 3/4 cup)
02 - 1/2 cup almond butter (or peanut butter)
03 - 3 tablespoons maple syrup
04 - 1 teaspoon vanilla extract

→ Dry Ingredients

05 - 2 cups rolled oats (gluten-free if needed)
06 - 1/4 teaspoon salt
07 - 1/2 teaspoon cinnamon (optional)
08 - 1/4 cup chocolate chips
09 - 1/3 cup chopped walnuts

# Instructions:

01 - Preheat the oven to 350°F and line a baking sheet with parchment paper.
02 - In a mixing bowl, combine the mashed bananas, almond butter, maple syrup and vanilla.
03 - In another bowl, mix together the oats, salt, cinnamon, chocolate chips and walnuts.
04 - Add the wet ingredients to the dry ingredients and mix until well combined.
05 - Using a cookie scoop, drop portions onto the baking sheet. Gently press down each cookie to flatten slightly.
06 - Bake for 12-15 minutes until golden brown around the edges.

# Notes:

01 - Store in a sealed container on the counter for 2 days or in the fridge for up to 5-6 days
02 - Use riper bananas for sweeter cookies
03 - Use large flaked rolled oats for best texture
