Put the pork into the slow cooker, scattering garlic cloves all around.

Whisk together soy sauce, honey, dark soy, sesame oil, vinegar, ginger, cornstarch, and red pepper flakes in a little mixing bowl.

Drizzle the sauce over the pork, turning it around to coat the surface (it doesn’t need to be completely covered).

Set the slow cooker on high for 2-2.5 hours or low for 4 hours until the pork gets super tender and falls apart easily.

Toss out the garlic cloves. Break the pork apart with forks, and give it a little extra high heat cooking to warm everything up. Pair it with noodles, rice, or pop it into sliders or tacos.
