Spiced Apple Cheesecake (Print Version)

# Ingredients:

01 - COOKIE CRUST
02 - 200g crushed graham crackers or digestive biscuits
03 - 1.5 tsp cinnamon powder
04 - Half a teaspoon of nutmeg
05 - 1.5 tbsp dark brown sugar
06 - 50g melted butter
07 - APPLES AND CRUMBLE
08 - 1 tablespoon white sugar
09 - 150g diced apple (small pieces)
10 - 1 tsp of cinnamon spice
11 - 100g all-purpose flour
12 - 80g brown sugar (dark)
13 - 70g soft butter (at room temperature)
14 - CHEESECAKE
15 - 600g softened cream cheese
16 - 200g regular sugar
17 - 2 teaspoons vanilla extract
18 - 150g sour cream at room temp
19 - 1 tbsp cornstarch
20 - 3 room-temperature large eggs

# Instructions:

01 - Crush the cookies with your sugar and spices, then mix with the melted butter. Evenly press this mix into your baking pan, bake it for about 10 minutes just to set it.
02 - Toss your apple chunks with the sugar and cinnamon. Then for the crumble, blend the flour with the butter and brown sugar until crumbly.
03 - Cream together the sugar and the softened cream cheese. Stir in the sour cream, then carefully add the eggs. Do NOT overmix—just until everything blends smoothly.
04 - Pour your cheesecake mixture onto the set base, sprinkle the apple mix over it, and finally scatter the crumble over the top.
05 - Place the pan in a water bath and bake at 160°C for 80 to 90 minutes. You want the center to barely jiggle.
06 - Leave the cheesecake to cool inside the oven for an hour. Bring it to room temp for another hour, then chill in the fridge for at least 6 hours before serving.

# Notes:

01 - It's best to work with everything at room temp!
02 - A water bath is your best shot at avoiding cracks.
03 - Let this cheesecake chill overnight for the best texture.
